Zucchini Walnut Muffins
Starbucks Copycat Recipe

Makes 2 Dozen


3 eggs
1/2 cup olive oil
1/2 cup unsweetened applesauce
1 3/4 cup sugar
2 cups grated zucchini (about 2-3 zucchini)
2 teaspoons vanilla extract
3 cups all-purpose flour
3 teaspoons cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
1 cup chopped walnuts

Preheat oven to 350 degrees. Line muffin tin with paper cups or grease well.

In a large bowl, beat together eggs, oil, applesauce, sugar, and vanilla. Stir in zucchini. In a separate large bowl, combine flour, cinnamon, nutmeg, baking soda, baking powder, salt, and half of the nuts. Add wet mixture to dry mixture and gently stir just until combined. Do not overmix!

Fill muffin cups about 2/3 full and top with remaining nuts. Bake 20–25 minutes, or until tops are golden brown and a toothpick comes out clean when inserted into the center of a muffin.
